Bluechin Parrotfish II

I usually go on fish markets here in Baja to see what I can find and that day I found this really fresh parrofish. I don’t usually like to buy this fish because of the role they have on the reef ecosystem but this time, because of the freshness I decided to buy one. In the Caribbean side they are already protected but not here in the Pacific side. The scales popped so nice and I would leave it in B&W but I know my clientes like colourful fish so we put color on it.
